Low-fat Banana-Lemon-Cranberry Bread
A good recipe for really ripe bananas.
Makes 1 loaf
4 ripe bananas1 cup sugar
½ cup apple sauce
1 lemon 1 tsp lemon extract
2 eggs
1 cup craisins (dried cranberries)
1 tsp baking soda
1 tbsp baking powder
1 tsp salt
2 cups and 1 tbsp flour
• Preheat oven to 350°F
• 9x5-inch loaf pan, lightly greased with nonstick vegetable spray.
1. Place bananas in a large bowl and mash with electric mixer. Zest the lemon. Rind the juice from the lemon. Stir zest, rind and sugar into banana mixture. Let stand for 15 minutes.
2. Add applesauce and eggs and beat well. Mix in lemon extract and craisins. Add remaining ingredients and mix thoroughly. Pour into loaf pan.
3. Bake for 45-60 minutes, or until a wooden toothpick inserted in the center of the loaf comes out clean.
4. Remove from oven and let stand 10 minutes before removing from pan. Cool on wire rack.
